Salted caramel popcorn cupcakes

My boyfriend works in the movie industry so I decided to make this cupcakes for his coworkers. They are easy to make (even easier if you go for the version with ready to use caramel spread) and looks like real popcorn bags. Not to mention that they taste good! A perfect treat for a movie night!

Ingredients :
- 200g unsalted butter, softened
- 1 teaspoon vanilla extract
- 1 cup caster sugar
- 3 eggs
- 2 1/2 cups self-raising flour
- 1/2 cup milk
- 1 cup of caramel spread
- 1 cup of popcorn

Preheat oven to 180°C/160°C 

Beat butter, vanilla and sugar in a bowl until light and fluffy. Add eggs, 1 at a time, beating after each addition. Stir in half the flour. Stir in half the milk. Repeat with remaining flour and milk until combined.

Spoon one tablespoon of cupcake mixture in the paper case, then pour 1 teaspoon of caramel sauce and cover with one more tablespoon of cupcake mixture.

Bake for 15 to 20 minutes. Let the cupcakes cool.
Once they're cool spread the top with the remaining caramel spread and cover with some popcorns on the top.
